It generally yields a high percentage of oil, and is high in polyphenols, win-win. Use it for cold applications and finishing, when you really want to taste the bright piquancy of EVOO, such as for dipping bread, dressing salads, and drizzling over grilled or steamed veggies, avocado toast and creamy cheeses like burrata and ricotta.
