Organic hard red spring wheat berries can be grown as short sprouts or planted densely for wheatgrass. The berries have a mild, nutty flavor and can also be dried and milled for whole-wheat baking. For jar sprouts, rinse the seed, soak in cool water for 4–12 hours, drain thoroughly, and rinse twice daily. Short sprouts are generally ready in 2–3 days. For wheatgrass, soak for 8–12 hours, drain, then spread the seed densely in a tray with drainage and a suitable growing medium. Keep evenly moist and harvest the grass when it reaches the preferred height, commonly around 8–12 days. Use clean equipment and follow current food-safety guidance for home sprouting.
