Sourcing & practices Violet began making bagels after moving to Flower Mound and searching unsuccessfully for the kind she remembered from New Jersey. Years of experimentation helped her refine the time-consuming process needed to consistently achieve the right flavor, structure, and chew. Every batch takes about two days and is made weekly to order through a traditional boil-and-bake method. Violet uses a thoughtful combination of organic and conventional, non-GMO, and traceable ingredients, sourcing from family-owned businesses, farmer-owned businesses, and member-owned cooperatives when possible.
