The first of a series of 8 blades that have been in the works since 2020. Oroshigane core made by a swordsmith in Northern Kyoto, clad in wrought iron prepared by a blacksmith in Melbourne. Forge welding, forging and heat treatment by Yoshikazu Tanaka in Sakai. It is a 255mm Gyuto with a thin full convex grind and a slight hamaguriba. This steel has great sharpenability, easily taking a very keen edge and retaining an aggressive feel after very fine stones. It is also quite practical for the kitchen in terms of wear resistance and reactivity. Paired with an ebony and blonde horn handle, and comes with a vintage leather-bound case.
