Food pairingMarinated fresh mushrooms with citrus, salmon and rapeseed terrine, pizza, sandwiches, hamburger steak, fried chicken, bamboo shoots with wakame, charcoal-grilled shiitake mushrooms, grilled yamame, firefly squid with vinegared miso, and ginger pork. WinemakingOUR COCO PETILLANT 2024 is made from grapes grown in Camino Vineyard in Kaminoyama, Yamagata. The grapes were hand-harvested in multiple passes and gently pressed after destemming. After settling overnight at low temperature, the juice was transferred to stainless steel tanks and fermented with indigenous yeasts for about three weeks at around 20°C. Fermentation was stopped by cooling while a moderate level of residual sugar remained, and the wine was bottled after racking without fining or filtration. The wine retains natural lees and fine bubbles, resulting from ongoing fermentation in the bottle. This wine is made in the style of méthode ancestrale, a traditional technique for producing lightly sparkling wines.
