Oxtail is rich in collagen and gelatine, which breaks down as it cooks, making for a luscious and silky sauce. While oxtail does take a while to cook, the incredibly rich flavor and tender fall-off-the-bone meat is so worth it! Goes Great With... Anything to mop up those delicious juices, like creamy mashed potatoes, steamed rice or polenta. Our Preferred Preparation... It has to be low and slow with plenty of liquid, whether that’s in the form of a braise, stew or a set-it-and-forget-it slow cooker.
