Panama Pacific 5 Year Rum. Panama Pacific Rum, Ingenio San Carlos Distillery, Panama — the second expression in the Panama Pacific range, extending the 3 Year Blanco's ex-bourbon foundation with an additional 2-year finishing period in toasted (not charred) Tennessee and Canadian rye whiskey casks, delivering prominent honeysuckle blooms, soft vanilla, dark caramel, sweet-tart Granny Smith apple, Asian pear, honeydew melon, and a soft lingering cedar finish. The 5 Year marks the point in the Panama Pacific range where the toasted rye whiskey cask character becomes a meaningful contributor to the rum's flavor profile. Like all Panama Pacific expressions, it begins with freshly distilled sugarcane from Ingenio San Carlos's Coffey copper column still, run at slightly lower proof to preserve richer base spirit character. Three years in used American Oak ex-bourbon casks establish the vanilla, caramel, and tropical fruit foundation; then 2 additional years in toasted Tennessee and Canadian rye whiskey barrels layer in the distinctive cedar, honey, and orchard fruit notes that distinguish the Panama Pacific style. The key technical distinction: these rye casks are toasted, not charred. Charring creates an aggressive, carbon-heavy extraction surface that rapidly imparts vanilla, caramel, and smoke. Toasting caramelizes the wood sugars gently without the char layer, allowing the 2-year finishing period to add honeysuckle, cedar, and orchard fruit in a way that complements rather than overpowers the rum's natural character. The result is a rum that bridges the fresh tropical accessibility of the Blanco with the dessert-like depth of the older expressions.Tasting Notes Nose: Prominent honeysuckle blooms mixed with soft vanilla and dark caramel. The toasted rye cask adds floral and orchard fruit complexity not present in the 3 Year. Palate: Sweet-tart caramel Granny Smith apple developing into Asian pear and honeydew melon. The interplay between the ex-bourbon vanilla and the toasted rye orchard fruit creates the characteristic Panama Pacific balance. Finish: Soft and long with lingering cedar notes from the toasted rye cask. Clean and refined. Honeysuckle, soft vanilla, and dark caramel on the nose. Sweet-tart Granny Smith apple evolving into Asian pear and honeydew melon on the palate. Soft, long finish with lingering cedar. What does the toasted rye cask add versus the 3 Year Blanco? The 3 Year Blanco shows tropical aromatics and banana pudding from ex-bourbon alone. The 5 Year's additional 2 years in toasted rye casks add honeysuckle, Granny Smith apple, Asian pear, and cedar — an orchard fruit dimension that the bourbon cask alone cannot create. Is this a cocktail rum or a sipper? Both — the 5 Year is complex enough to appreciate neat or on ice, and clean enough to integrate beautifully in cocktails. A natural choice for a Daiquiri or Old Fashioned where the orchard fruit and cedar character add dimension. {"@context":"https://schema.org","@type":"FAQPage","mainEntity":[{"@type":"Question","name":"What does Panama Pacific 5 Year taste like?","acceptedAnswer":{"@type":"Answer","text":"Honeysuckle, soft vanilla, and dark caramel on the nose.
