We've found a new panettone maker this year – Pasticceria Scarpato in Italy. After tasting 25 different panettone from 8 suppliers, they came out on top. The dough is incredibly li ght and airy, almost cloud-like – exactly what classic panettone should be. The traditional recipe is done perfectly here, packed with raisins and candied fruit, and with that signature airy texture that makes all the difference.
