Since founding his domaine in 1987, Pascal Jolivet has built one of Sancerre's largest independent estates, farming over 120 acres across parcels including les Caillotes and le Chê ne Marchand under sustainable, organic, and biodynamic practices. Sancerre's left-bank terroir combines clay, limestone, and flint soils that push pronounced minerality through the wine. Wild yeast fermentation in temperature-controlled stainless steel keeps the profile taut and aromatic.
