2015 was a warm, generous vintage in Champagne, sunny and abundant, producing grapes of excellent ripeness and aromatic concentration. At Pascal Mazet, the Millésime is always a limited edition, produced only in years of exceptional quality, and always from a three-variety blend vinified and aged in French oak barrels. Like all Mazet champagnes, it is certified organic. In the same vein as the 2014 edition (10 years on lees, 2,935 bottles), the 2015 Millésime continues the house's tradition of releasing vintage champagnes only when they are truly ready, years after the harvest, with patience as the defining ingredient. Tasting notes: The elegance of a warm year, ripe citrus aromas and notes of white-fleshed fruit, with the complexity added by the oak vinification and the extended lees ageing. Generous, balanced and long. Food pairing: A gastronomic champagne. Outstanding with roasted poultry, veal, aged cheeses, foie gras and dishes with mushrooms or truffles.
