Passion Fruit Cake – tangy, tropical, and made right here Right. Passion fruit. It’s not for everyone – some people think it’s too sharp. But if you get it, you get it. That little pop of sour, the crunch of the seeds, the way it makes your mouth water. I love it. So yeah, this cake started because someone in Downham asked if I could do something that wasn’t just sweet. “Something with a kick,” she said. I thought about passion fruit curd – tangy, creamy, the real thing. No powders or syrups. I bake these in Bromley (my little shop) and folks from Grove Park, Sydenham, Catford & Bellingham keep asking for them. So now I deliver that way too, or you can pop in and collect. What’s inside? Vanilla sponge – light, not too dense. Then I soak it with passion fruit juice (straight from the fruit, none of that bottled rubbish). Between the layers? Homemade passion fruit curd – butter, sugar, eggs, and a lot of passion fruit. Takes time but worth it. On top, a passion fruit buttercream – creamy, a little sweet, but still tangy. And a drizzle of passion fruit sauce, plus a few fresh halves so you know what you’re getting. Who’s buying this? People who are tired of lemon.
