From our territory to your kitchen: “La Nostrana” durum wheat pasta. 500g SHORT PASTA AVAILABLE: PENNONI, LUMACHE, PACCHERI, FUSILLONI LONG PASTA AVAILABLE: LINGUINE The wheat destined to be transformed into the selected pasta of the “la Nostrana” line is grown in the countryside near the Pastificio Mozzo in the Veneto region. Mozzo has involved the local farmers in our project and objective of growing durum wheat by carefully analysing and selecting the soil and following the plant’s entire cycle, pampering the young seedlings and the plants right up to the harvest. The result is durum wheat with very high protein content - 14% - and organoleptic characteristics that are among the best in the world. The production method is still deliberately traditional and our pasta makers carefully follow the entire process. Bronze drawing and a very long drying process, of more than 32 hours at a low temperature, give the pasta a rougher texture and ensure that it always cooks “al dente”. PRODUCED BY:
