Alla Norma originated in Sicily, Italy, as a macaroni or rigatoni dish paired with aubergines, tomatoes & topped with a light snow cap of ricotta salata. Chef Nic creates a warm, rustic, hearty meal by using a shortened bucatini noodle and adding fragrant herbs like fresh basil and oregano and a hint of spice from crushed red pepper.
