Phaseolus vulgaris. O'odham Pink. Also called S-wegi mu:n. A pink bean from desert borderlands of Sonora and Arizona once widely grown by Tohono O'odham people. Does not tolerate the dry heat of early summer in southern Arizona, but it is an excellent choice for monsoon planting. Produces white flowers. The sprawling, fast-growing plants produce white flowers and, in the low desert, are ready to harvest in early spring or late fall. Delicious, creamy bean when cooked. A traditional harvest includes uprooting the entire plant, leaving it out to dry and then threshing the plant with sticks to remove the pods before they are winnowed in the wind.
