The Pecancho Bar is the first in a new series of filled bars from Monsoon, and it starts close to home. Arizona-grown pecans are slow-roasted and worked into a praline, blended wit h dark milk chocolate, and folded together with dried ancho chile and puffed amaranth into a composition that is rich, salty-sweet, and lightly spiced. It is a reflection of the flavors of this region and the direction we are moving — chocolate as a vehicle for place rather than just ingredient. Show more
