The base spirit uses a high-rye mashbill of 74% corn, 21% rye, and 5% malted barley, aged four to five years in charred new American oak barrels before undergoing a secondary finish in new, freshly toasted barrels. What distinguishes each batch is the deliberate variation in char levels (#1 through #5) and toast levels (light, medium, or heavy), meaning no two batches share the exact same flavor fingerprint — a deliberate approach that rewards repeat exploration.Tasting NotesAroma: The nose opens with warm honey and vanilla bean, then develops into caramel and a bright lemon peel accent. Underneath, brown sugar and a subtle flash of hot cherry pepper add complexity as the proof asserts itself.Taste: The palate enters thick and coating, with an immediate wave of cinnamon spice reminiscent of Red Hots candy alongside rich vanilla and honey. Mid-palate, toasted oak and lemongrass emerge, while the high rye content pushes baking spice and a peppery bite that builds steadily toward peak intensity.Finish: The finish is moderate in length with lingering brown sugar, cracked black pepper, and a light char-smoke quality. A toasted grain sweetness persists, keeping the bourbon warm without turning harsh despite the elevated proof. How to Drink Penelope Toasted Barrel StrengthAt cask strength, a few drops of water open up the toasted oak and honey notes significantly — start neat to gauge the batch proof, then add water incrementally. For cocktails, the robust proof and spiced character hold up exceptionally well: try it in an Old Fashioned, where the cinnamon and brown sugar notes align naturally with bitters and a citrus peel; in a Boulevardier, where the toasted oak and rye spice stand up to Campari's bitterness; or in a Gold Rush, where honey syrup amplifies the bourbon's existing honey backbone without masking the barrel finish.Best For Bourbon collectors exploring batch variation and toasted barrel finishes Gifting a whiskey enthusiast who already owns the standard Penelope expressions Side-by-side tastings comparing toasted versus charred barrel influence Building barrel-proof cocktails that demand a bourbon with backbone and spice Frequently Asked QuestionsWhat does Penelope Toasted Barrel Strength taste like?
