"Penne Rigate" is Italian for “striped pens”. As with all our pasta, it is imported from the Abruzzo region of Italy. Penne Rigate pasta is created from All-Durum wheat and fashion ed on brass dies (this gives it a “rougher” surface-texture for better sauce adhesion). Penne Rigate, perhaps more than any other type of pasta, was a weekly staple for our family. Our mother would settle for “smooth” penne only if our uncle Emil was out of "Rigate" at our store.
