One of my personal favourite recipes. Roasted eggplant blended with slow cooked onion, garlic, dried mint & some subtle spices. Drizzle with yoghurt & if you like, sprinkle with ch opped walnuts for a bit of extra texture A seriously versatile side dish that brings the flavour!
