Grown at 1,100–1,700 meters in rich clay mineral soils, the Caturra, Bourbon, Catuai, Pache, and Catimor varieties thrive in the Andean highland climate, developing a natural sweetness and refined complexity that is distinctly Peruvian. Each cherry is gully washed and sun dried — a careful, unhurried process that preserves the bean's luminous clarity and allows its most delicate flavors to shine.
