It gets its vibrant energy from a clever winemaking technique. Two-thirds of the hand-picked grapes are pressed to extract the juice, which is then poured directly over the remaining intact bunches. They ferment together in open vats for 12 days. This semi-carbonic method pulls out all the bright, juicy fruit flavours while keeping the tannins silky smooth. After fermentation, the wine rests on its lees in a mix of French and Hungarian oak barrels for nine months. This ageing process adds a lovely depth and gentle texture to the final pour.
