Entrée Venison Carpaccio: Delicate slices of venison carpaccio, complemented by crunchy pistachios, fresh watercress, a rich Pharos reduction, shallots, and shavings of Grana Padano. Stracciatella with Mushroom: Creamy stracciatella cheese paired with sautéed mushrooms, parsley pesto, and a mix of seeds, served with house-made focaccia. Main Lamb Shank & Pharos Tagine: Slow-cooked lamb shank infused with Pharos wine, served with creamy polenta and BBQ baby carrots. Cheese Course Blue Cheese: A selection of blue cheese served with quince, walnut, fig chutney, pumpernickel, and lavosh. Dessert Pharos Poached Pear: Pear poached in Pharos wine, paired with a hazelnut and white chocolate mascarpone, and thyme butter shortbread.
