Piave Vecchio Cheese The Facts Country: ItalyMilk Type: pasteurized CowAge: 10-12 Months Tasting Notes: An aged cheese from Italy, with a texture similar to Parmigianno—but a little creamier. Piave Vecchio Cheese features tones of hazelnut, with a citrus finish. A great cheese to serve with your antipasto before a meal, or to grate into pasta. Produced with milk from the Bruna Alpina breed, which feeds on the surrounding mountain pastures and creates a rich high protein milk. This lends to the sweet, nutty and fruity flavours of Piave. We stock two types, Vecchio which is aged for 10-12 months and Stravecchio which is 12 months+ with a much drier, harder texture. Piave Vecchio is a DOP protected cheese produced in the Dolomites area of Belluno province of Veneto.
