Made from 100% Garganega, the Soave Classico is pale-straw coloured, offering aromas of white flowers, honey, and ripe peach. On the palate, it is fresh and crisp with a mineral tang that's beautifully balanced by rich fruit flavours. Good fruit concentration, evened out with zesty acidity, enhances its long finish. The grapes for this wine are hand-picked, destemmed and crushed in a protective environment. Free run juice is fermented at low temperatures (between 14-18°C) in glass-lined cement tanks. The wine remains in glass-lined cement tanks on the fine lees for a period which varies according to the vintage, usually about 5-9 months. Pioneers of the Soave region of Piedmont, the Pieropan family's vines cover 58 hectares of stony, occasionally volcanic soils, using their fruit to make some of Italy's best white wines.
