These are pine nuts still in the shell: long, slender, ivory kernels inside a thin tan shell you crack open by hand.If you grew up in an Afghan, Pakistani or northern Indian household, you already know this nut. It arrives when the weather turns. A bowl of chilgoza by the sandali, cracked one at a time through a long winter evening, is less a snack than a season.Why chilgoza costs what it costsChilgoza cannot be farmed. The trees grow wild at altitude, the cones are collected by hand by families who climb for them, and the harvest comes once a year — a few short weeks in autumn. There is no second crop and no way to hurry it.That scarcity is the whole story. It is why chilgoza has always been the most expensive nut on the dry-fruit shop counter, and why the good stock is gone by February.Ours is new-crop, single-origin Afghan chilgoza — lightly roasted in the shell, nothing added.How to eat themCrack the shell between your teeth or with light finger pressure, the way you would open a sunflower seed, and eat the kernel whole. They arrive lightly roasted and ready to eat straight from the bag.To wake them up, warm them in a dry pan over medium heat for 3–4 minutes, shaking often, until they smell nutty. Let them cool before cracking — the shells split more cleanly cold. No oil, no salt needed.Keeping them freshChilgoza is high in natural oil, which is what gives it that flavour — and what turns it if you leave it in a warm cupboard. Store cool, dark and airtight. Past a month, refrigerate.
