The Pineapple Linzer Cookie is an interpretation of the traditional Taiwanese pineapple cake. The cookie is made with two discs of hazelnut shortbread, filled with pineapple jam, and finished with lime zest and sea salt. It was the very first sweet snack developed to complement the tea service at Té Company. Since its inception, this Linzer has been a bestselling treat and have been a favorite amongst New Yorkers and pastry chefs around the world.
