This product uses white cabbage, red beet shreds, carraway seeds, and salt. In the initial fermentation the lacto-bacteria attacks the sugar in the beets. This causes an order of m agnitude increase in the number of bacteria which quickly consume the beet sugar and then attacks the cabbage. This makes for a deeper and more flavored sauerkraut.
