Pista Barfi This one begins with milk, cooked slowly until it reduces into khoya. Once it reaches the right consistency, sugar is folded in, followed by plenty of pistachios. The m ixture is cooked together a little longer, then spread by hand, left to set, and cut into pieces once it’s ready.
