This reclaimed land turned out to contain highly fertile soil; perfect farming land. Although protected by a network of dykes, dunes and other coastal protection, half of the Netherlands still lays meters below sea level. And it keeps sinking an average of 7mm per year. The main ingredients are green polder herbs like artemisia, clary sage and carrot seeds.
