Instead of using a hand-held potato masher, which often leaves lumps in the potato, pass the cooked peeled potatoes through the fine disk of the potato ricer. The press action of the potato ricer prevents the potatoes becoming 'gluey' - unlike when they are processed with a blender or food processor - keeping the mashed potatoes light and fluffly.
