The first release of our collaboration is this incredibly clean and expressive washed coffee from Finca La Palestina! I hope you enjoy my curation of coffees from their menu. Coffee is available in both 100g sizes and 250g boxes XLIII x Brian Quan: Finca La Palestina ‘Gesha Inca’ #5485 Origin: Cajamarca Region: Jaén, San José del Alto Farm: Finca La Palestina Variety: 'Gesha Inca' or maybe 'SL09' Crop Year: 2025 Altitude: 1700 - 1900 masl Process: Washed Flavor Profile: Reminiscent of Blackcurrant, Jasmine, Orange I found jasmine, currants, citrus, big florals, and a very clean presentation. This is a really lovely expression of SL9 and a great example of why we love Peruvian coffees of this style. Tons of tropical acidity + jasmine florals + mega clean + very very light = an intoxicating combo. With this specific coffee I found it flowed very fast and benefited from finer grind and trying to push for higher levels of acidity. This roast profile is what I would consider proper ultra light and requires extended periods of rest before it really opens up!!! Please also check out this video: Resting Recommendations: LET IT REST. DO NOT TOUCH THIS COFFEE FOR AT LEAST 2 MONTHS. This is proper ultra-light for many of you and requires a ton of rest to open up. From XLIII on Resting and Storage: – Coffee wants to rest in a cool place away from sunlight and sealed bags;– Our coffee reaches its peak flavor 04 weeks after roasting for beans that are not packaged and are served directly at our store chain. For packaged coffee intended for distribution, we apply flavor-locking technology. As a natural result, it may take 8 – 12 weeks, or even up to 16 weeks after roasting, for the coffee to reach its peak flavor (Please note that the resting time required to reach peak flavor is directly proportional to the amount of time the coffee remains sealed in flavor-locking packaging. The longer the coffee stays in an airtight bag, the longer it will take to degas and reach its optimal peak).– Our coffee maintains its aroma spectrum within 06 months of opening the bag, and the quality gradually decreases;– Our coffee is packed with flavor-locking technology, so it can be preserved for 02 years from the date of production when unopened. We also recommend not using it when first opening the bag. Please open and close the bag for another 03 days to fully release the flavor-locking encapsulation technology;– Our coffee will clearly show the flavor description after 03 days from when you open and close the bag for the first time.
