Première Pêche is a celebration of terroir—a lambic-inspired ale that combines locally grown peaches with the Belgian tradition of spontaneous fermentation. The beer began as a wheat ale brewed on a winter day in 2022 using unmalted wheat and two-row barley grown on the FP Farm. The wort was left to cool overnight in our barn’s koelship, where temperatures below 42℉ and exposure to the surrounding vineyards allowed native yeasts and microorganisms to begin fermentation. After two years of aging in French oak wine barrels, we added August Flame peaches, sparking a year-long secondary fermentation. The beer was bottled in summer 2025 and has since been cellaring, allowing for natural carbonation and continued flavor development. The result is a vibrant, peach-forward blend bursting with aromas of ripe summer stone fruit and flavors reminiscent of peach ring gummies. A lively spritz of carbonation balances the fruit character, while a dry, lingering tartness carries notes of fresh peach nectar through the finish. 41 cases produced.
