About the cultivar blend Our Everyday Grade is a blend of three Japanese cultivars: Yutakamidori for body, Yabukita for balance and Asanoka for aroma. Each plays a role in why this matcha holds its flavour through milk, ice and other ingredients. All three cultivars are shade-grown on organic farms in Kyushu, Japan. The shade period increases L-theanine content in the leaf, which is the amino acid behind matcha's calm, focused energy. Everyday vs. Ceremonial: which one? Both grades are JAS certified organic, single-origin Kyushu, and single-ingredient. The difference is in how they taste and how they are best used. Everyday Matcha has a fuller, bolder flavour that cuts through milk and ice. It is the better choice for lattes, iced matcha, smoothies, baking, and any drink where matcha is one of several ingredients. Ceremonial Grade Matcha is smoother, more delicate, and best whisked with water and drunk on its own. It is the traditional choice for a straight bowl of matcha. If you drink matcha mostly as a latte or blended drink, start here. If you want a pure, whisked matcha experience, start with Ceremonial. Many of our customers keep both on hand. Why organic matters Less than 5% of tea farms in Japan are certified organic. Organic farms need to sit high on ridges and mountaintops, separated from conventional fields so rain does not carry pesticides into their soil. It is harder to grow, more expensive to produce and far less common. We chose organic because matcha is different from other teas. You drink the whole leaf, ground to a fine powder. Nothing is steeped and discarded. What goes into the soil goes into you. Every batch is JAS (Japanese Agricultural Standard) certified organic. Vegan, gluten-free and dairy-free.
