Sweet, nutty with hints of caramel and butterscotch. The little crunchy crystals in the paste are a perfect textural balance to the creaminess of the cheese. It's a traditionally Dutch cheese however it has influences of Italian aged cheeses with its slight resemblance to aged Reggiano. Not as dry but has hints of it in the flavour.
