The secret is something that is unique to lever machines like the PRO 800; true low-pressure pre-infusion allowing for softer, more full-bodied shots that are sweeter in flavour. You do this by pulling the lever to fill the group, applying about 1-1.5 bar from the boiler and lightly soaking the coffee. By carefully lifting the lever, a spring-loaded piston is released, gradually building pressure and then declining as the lever draws back. This achieves a sort of pressure profiling that works perfectly to unlock the different flavors in specialty coffee. For added control, the PRO 800 features a Gicar PID controller artfully hidden behind the drip tray to preserve the machine’s classic aesthetic.
