Finca La Negrita sits at 1,800 meters on the slopes of Colombia’s Nevado del Tolima. The farm’s location, where glacial air from the volcano meets warm currents from the Magdalena River, creates a rare microclimate: misted nights, slow cherry maturation, and nearly year-round harvests. Only ten percent of the land is planted in coffee. The rest remains forested, supporting local biodiversity and stabilizing the climate. Within this cultivated area, producer Mauricio Shattah has built one of Colombia’s most advanced varietal collections, combining scientific precision with a deep commitment to quality. Project III brings together three roasters— Phil & Sebastian Coffee Roasters, Onyx Coffee Lab, and La Cabra Coffee, each selecting a lot from Finca La Negrita and roasting it in a way that reflects their individual approach. One producer, three distinct perspectives. This box set is a look at how technique, taste, and philosophy shape the way coffee is roasted, sourced, and experienced. Available in limited quantities. Orders ship the third week of November. Each box set contains three, 80g bags of coffee, each sourced and roasted by their respective roaster: La Cabra: Mauricio Shattah / La Negrita / Red Honey Gesha Onyx: Mauricio Shattah / La Negrita / Natural Gesha P&S: Mauricio Shattah / La Negrita / Semi-Washed Gesha Sales end 11/14**
