Winemaking This prosecco DOC Brut Rosé from Pizzolato BIO/Vegan is thus the result of a long charmat method of about two months in an autoclave, obtained from a blend of Glera and Pinot Noir. The Pinot Noir grapes, after a gentle pressing, are then left in contact with the skins for the period necessary to achieve the desired color. The must is then subjected to fermentation in steel tanks at a controlled temperature of 18°C. Finally, a cuvée is then prepared with Prosecco wine (90%) for about 2 months in an autoclave. 5 atm.
