The grapes come from vineyards located in La Seca (Valladolid). These are planted on south-facing slopes, with the intention of taking advantage of sunshine, necessary for the optimal ripening of the grapes.The climate of the area is dry, with hot summers and long, cold winters, with night frosts reaching -18 ° C, and with very steep temperature differences between day and night, ideal for proper maturation of the grape.The development of Protos Verdejo starts with a harvest and transport of grapes in boxes of 20kg to manually select them in the cellar.Once selected, the grapes undergo rigorous maceration and fermentation at controlled temperature of 14 ° C with an eye to maintain the maximum freshness possible in this Protos Verdejo. Tasting Note: Straw yellow colour with greenish reflections. Clean and very bright. Expressive nose, very reflective of the variety. Aromas of tropical fruit prevail along with ripe citrus touches.
