Actually a variety of squash in the cucumber family, Pul Qua is very popular in Asian cuisine and also called Opo Squash. Similar to more familiar types of squash, Pul Qua can often be used in much the same way. A long, thin squash with smooth skin, Pul Qua resembles a large zucchini with its yellow-green color. Available year-round, Pul Qua is abundant in the summer and fall. A good accompaniment to stir-fries and soups, Pul Qua is a good source of vitamin C and molybdenum.
