Pumpkin Risotto with Toasted Pine Nuts and Roasted Garlic Risotto! Oh my! This is my new favourite! Arborio rice, dried pumpkin, toasted pine nuts, roasted garlic and parmesan chee se create an oh-so-deliciously comforting dish. Try it on its own as a main or have it alongside your favourite veggies or protein. Just add water, heat and the occasional stir and it’s ready in 16 minutes. Yummo. Show more
