Our quarter pig is a total of 25 lbs. We start with the standard cuts: 8 pork chops, 1 package ground pork, 2 regular sausage, 2 extra seasoning sausage, 1 maple sausage patty, and 3-4 packages bacon. (some packages are more than 1 lb, total weight will be approximately 4 lbs.) Total weight for the standard cuts is 15 lbs. We have added different options for the remaining 10 lbs. Please choose 1 from the following options: Three packages of brats (one each of Philly, Hatch Chili, Cheddar), 2 packages cutlets (4/pkg, tenderized), 1 ham roast (cured, bone in, approx. 3 lbs.) Two shoulder roasts (bone in, 2 to 3 lbs), 1 shoulder steak (2/pkg, bone in) 2 ham steaks (2/pkg, 5/8” cut, cured) 1 shoulder bacon (regular cut, cured, smoked.)
