This extra mature, clothbound cheddar is made the old-fashioned way. Farmhouse cheddar, made on the farm and in small batches, reflects Quicke’s ethos of quality over quantity. The select herd of hybrid cows rotate through the rich pastures to optimise the nutritional content of the milk and the impact on the environment. Handcrafted using heritage starters, Quicke’s cheese is made to a traditional cheddar recipe, clothbound and naturally matured, typically for 18 months.
