Variety: 100% Sauvignon Vinification: Pressing followed by settling for 24 hours. Fermentation and aging in thermo-regulated vats. Racking in mid-November and resting on fine lees before filtration and first bottling in January. Tasting Notes: The palate finds a nice balance between freshness, roundness and fruitiness.
