The winemaking utilizes a dual approach to build structural density, fermenting seventy percent in stainless steel and thirty percent in new French oak barrels. The juice is driven by native wild yeasts and undergoes an extended eight-month maturation on its fine fermentation lees. Regular lees stirring, known as bâtonnage, is employed to enrich the body without masking high-altitude volcanic minerality. It pours a luminous straw-yellow color, opening with intense aromas of lemon sorbet, sweet smoke, linden, and fresh aromatic herbs. On the palate, the silky yet energetic frame pairs a concentrated core of green apple and exotic fruit with a piercing precision. A vibrant wave of high natural acidity runs through the waxy texture, keeping the mouthfeel thoroughly refreshed. It concludes with an exceptionally long, complex finish.
