Fill the tray with holes with 1 inch of fine compost. Compact the compost. Spread the Amaranth microgreen seeds evenly over the compost, leaving a small bit of space between each seed. Press the seeds into the soil. Water the seeds and soil. Turn another tray with no holes upside down and place it over the tray with seeds in it, so it will act as a dome. Amaranth seeds do not need to be weighed down. After 5 - 6 days remove the dome, and place them under a grow light, onto a window sill, or into light in a greenhouse. Water every second day by pouring water into the bottom tray with no holes, until day 14 - 28. Amaranth will be ready to harvest after 14 days. If you want it to develop its first true leaves, wait until between day 21 - 28 to harvest. Harvest all of the microgreens using a sharp knife or scissors. Store the harvested microgreens in the refrigerator.
