Red Creole is an heirloom variety of onion that produces flavorful white bulbs wrapped in attractive reddish-purple skins. A short-day variety, Red Creole excels throughout the Sou th, producing 3 to 4-inch bulbs that store up to six months. While this variety has a slight tendency to bolt under certain growing conditions, transplanting the young plants a few weeks later than is typical will greatly reduce the number of onion plants that go to seed. Northern gardeners should note that this is rarely a problem given our daylength, however the bulbs will not get as large at maturity as they do in their intended southern environment. They do make great fresh onions, however, and we enjoy using them in salads and wraps.
