Tasting Notes: Saturn Peach, Milk Oolong, Peony Description: This coffee is produced by Rex Raguni who runs Mong coffee in the Western Highlands Province of Papua New Guinea. The varieties grown locally result in a field blend of Blue Mountain (Typica), Caturra, and Mundo Novo. As with most coffee from this origin, the cherries are sourced from local farmers who own small coffee plots and sell to a centralized location for processing and drying, in this case Mong Coffee. After pulping and fermentation, the coffee is then slow-dried on shaded raised beds to ensure a stable product. Rex was the first in the country to implement a large scale slow-dried process with this coffee being from his second slow-dried harvest. The results are very apparent, this is a coffee unlike any we’ve had in the past from Papua New Guinea.Impressions: The mix of varieties, terroir, and processing result in a fairly unique coffee. In the aroma there is a very sweet and creamy stone fruit character, almost like a saturn peach. This gives way to sweet florals, cola-like spices, and a gentle earthy character almost reminiscent a great Rwandan coffee. As the coffee cools the aroma shifts a staggering amount. The spices fade and the florals open up resulting in an extremely sweet milky oolong character perfumed with fresh peony flowers. On the palate the fresh and syrupy peach character shines up front with a snap of acidity, fades to the creamy milky oolong, and finishes with perfumed fresh florals like lily and peony.
