Dennis Wolf came back to the family winery at Grosskarlbach in 2018 and turned it biodynamic almost immediately, earning Demeter certification by 2021. He works fourteen hectares a cross Grosskarlbach and Laumersheim, and the Kirschgarten is the site that matters most: a thin skin of loess and clay over massive limestone, more than half of it active lime, which is exactly what gives this Riesling its spine. The winemaking is deliberately spare. Eight hours of cold maceration, a spontaneous fermentation in used 350 and 600 litre barrels, then twenty-five months resting on full lees before bottling with no fining and no filtration.
