Rigatoni Rigate is the ridged tube in the Pasta Sonoma short line: wide enough for a hearty ragu, sturdy enough for the oven, with lines on the outside so sauce has something to ho ld. We extrude it from premium durum and semolina milled from Montana hard amber durum wheat and dry it slowly in Rohnert Park. It is a classical Italian shape made in small American batches, not a commodity box from a high-speed plant.
