In order to make nibs cocoa beans are first roasted. Next they are cracked and then de-shelled by a "winnower". The resulting pieces of beans are called nibs. Since nibs are direct ly from the cocoa tree, they are naturally low in sugar content and high in tanins and fiber. The addition of the roasted cocoa nib back into dark chocolate enhances it's antioxidant capacity while adding a crunchy textural note. Local honey blends the hints of ancho chile and sea salt to a rich, cohesive flavor. Show more
