Creamy soups don't have to be complex or require a ton of cream. All you need is a great tasting vegetable, a blender, and a little bit of patience with the oven. Red peppers are o ne of our favourite veggies for this, and slow roasting them ensures that the natural sugars have time to develop while excess liquid is removed resulting in a concentrated burst of flavor (think dry aging, but for vegetables).
